El olivo, denominado científicamente Olea europaea , es un árbol muy longevo (puede superar el millar de años), caracterizado por tener un tronco retorcido y copa redondeada. Sus hojas son lanceoladas, coriáceas, verdes por el haz y plateadas por el envés. Es un árbol perenne que pertenece a la familia de las Oleáceas.
El aceite de oliva es el jugo oleoso que se extrae por prensado en frío, del fruto del olivo, de color dorado o verdoso, denso y con un perfumado aroma.
La palabra aceite deriva del nombre árabe az-zait, que significa jugo de oliva. Donde se realiza la extracción de aceite se denomina almazara y esta palabra también deriva del vocablo árabe al-mas?sara, que significa extraer, exprimir. |
